Hamburgers go well with beer and ales, so does a hearty pasta, chili, garlic prawns, or chicken with attitude.

 

RECIPE OF THE MONTH: Chicken with Mozzarella

(Vegetarians – I tried a version of this with firm tofu – very nice :)

You will need: 4 boneless, skinless chicken breasts.

                        4 thick slices of mozzarella,

                        Sun dried tomatoes in olive oil

                        Optional: Proscuitto or Parma ham

Make a long horizontal slice through each chicken breast without cutting all the way through.  Stuff with a piece of the mozzarella and some of the sun dried tomatoes which have been sprinkled with fresh ground pepper, oregano, and other favorite spices.  Heat 2 Tablespoons oil, 1 Tablespoon butter; fry chicken 4 minutes on each side, then cook in a preheated 4000 oven for 15 minutes.  Meanwhile pan fry the ham for a minute to make it crispy. Serve chicken on a bed of salad greens topped with the ham and accompanied by grilled tomatoes.

Vancouver 2010 Olympic Games    February was a spectacular month for our Olympic team.  Glowing Hearts!  While they were gathering up medals, so were we.  We won 2 medals for wine in Oregon, (a red and a white) and 7 medals for wine, including two sparkling wines, at the Saanich Sommeliers Competition, as well as a medal for beer.  To top it off, at that competition, we received the trophy for Best Beer in Show.  We are pretty excited about that!
